Sticky toffee pudding: what it costs to put on the plate

A tray of date sponge and a pan of toffee sauce, twelve portions, costed from pack prices dated 7 September 2026. The pudding almost every pub sells and almost nobody costs.

Cost per line is pack price × (amount used ÷ pack size), the same sum the tool runs. Change one pack price and every line that uses it moves.

Method

  1. Stone and chop the dates, cover with 400 ml boiling water, add the bicarbonate and leave 10 minutes; blend roughly.
  2. Cream 100 g of the butter with the light brown sugar, beat in the eggs one at a time, then the treacle and vanilla.
  3. Fold in the flour, then the date mixture. Pour into a lined tray and bake at 180 °C (355 °F) for 30-35 minutes until a skewer comes out clean.
  4. Sauce: melt the remaining butter with the muscovado, golden syrup and cream; simmer 3 minutes until glossy.
  5. Portion the sponge, soak with half the sauce, and serve hot with the rest over. Cream or ice cream to serve is not costed.

Costing notes

Under a pound a portion for ingredients: this is the highest-margin plate on most pub menus. Butter and cream are two-fifths of the cost, so a dairy price rise shows here first. Dates are costed from a 5 kg wholesale case; a 250 g retail pack roughly doubles that line. Ice cream, cream or custard to serve is not included: add a row.

Where the prices came from

JJ Foodservice collection prices as shown on its public search pages on 7 September 2026 (delivery prices run about £1-2 a case higher). The site does not label VAT on most lines: raw food is zero-rated in the UK, while oil, vanilla and alcohol carry standard-rate VAT. Where JJ had no line that day, a Tesco retail price is used and marked. Your supplier's price is the one that matters: open the recipe and type it in.
