The event

Sell-through is the share of what you prep that you expect to actually sell; the rest is unsold stock. 85% is a starting assumption, not a researched average — set it from your own last few events once you have them.

Gross profit = revenue (ex-VAT) − food cost, on the portions prepped for the event. Break-even covers = total food cost ÷ (revenue ex-VAT ÷ expected covers), rounded up — how many paying covers are needed to cover what you've spent on prep. VAT is the UK standard rate, 20%.
